All the classics recipes are represented, by the master chefs who made them famous or made them daily for their restaurants. I grew up eating in the restaurants where these gentlemen cooked and it's wonderful to have their recipes along with their insights into cooking in general.I have dozens of Louisiana/Cajun/Creole cookbooks, and Creole Feast and The Commander's Palace Cookbook are the two most indispensible. They are reference materials as much as they are cookbooks. *****.
Outstanding history along with excellent recipes. This compendium contains many variations of more commonly available Creole recipes. It is a great addition to the library of anyone who wants to learn more about the development of some of the best Creole food New Orleans has to offer.
When I learned of Rudy Lombard's passing I also learned that he co-wrote this cookbook. Growing up in Algiers, LA his daddy who we affectionately called "Lommy" was one of my favorite people. He looked out for everyone and his son had a passion for cooking. This will be cherished.

Ole style Creole! If you are looking for a cookbook that takes you back to the past...this is it. Different styles; but 100% New Orleans in taste.

This is a CLASSIC New Orleans cookbook with even more goodies than I knew of - can't wait to try some of them! It is chock full of recipes too - excited to have it in my collection for reference too.
